How do I sort processes by CPU usage, Memory usage or the like in xfce4-taskmanage

When I use xfce4-taskmanager the main question is mostly:
- Who eats up all my memory? or
- Who stresses my CPU to its limits? or
- What is going on although I see no progress in the action which I have just initiated?
I thought, clicking on CPU Downward triangle gives me a display of running processes sorted by CPU usage. However, the result shows me 0,00% usage processes on both ends of the list and the memory consuming ones are still in the middle!
How can I set it, that those values are averages of – say 10 or 20 seconds?
I thought, clicking on RSS Downward triangle orders the running processes by CPU usage. (BTW: what does the abbreviation RSS stand for, Rich Site Summmary is definitely as wrong as Rudolf Steiner Schule or Royal Statistical Society). Unfortunately, the processes are not sorted by memory usage then, the memory hogs are still in the middle of the list.
Under process, there are little triangles either pointing to the right or downward. If they point to the right: do they then tell about the added RSS or CPU usage including the items, which will be shown separately after the triangle has been turned a downward one?
